1 large skinless chicken breast 1 cup broccoli, roughly chopped 1/2 cup carrot, diced 1/2 cup potato, diced 2/3 cup double cream 1 cup cheddar cheese, grated 2 puff pastry sheets, thawed and halved 1 egg, beaten |
1. Preheat oven to 200°C.
2. Place chicken on a lightly oiled oven tray and bake for 20 minutes. Allow to cool and shred with two forks.
3. Whilst the chicken is baking, place a medium sized saucepan over a high heat and boil the broccoli, carrot and potato for 10 minutes or just soft. Strain and set aside.
4. Place large frying pan over a medium heat. Add vegetables, cream and cheese. Stir for 5 minutes or until the cheese has melted, add chicken and stir to combine.
5. Divide mixture amongst each parcel, fold over and seal edges with a fork.
6. Brush parcels with egg wash and bake for 18-20 minutes or until golden. Allow to sit for 5 minutes before serving.
