1 kg small to medium Dutch cream potatoes 4 tablespoons extra virgin olive oil 1 tablespoon garlic, grated 1/4 cup parsley, finely chopped 1 teaspoon salt 140g parmesan cheese, grated |
1. Preheat oven to 180°C and spray oven tray with olive oil.
2. In a large bowl, combine olive oil, garlic, parsley, salt and half the parmesan cheese.
3. Slice potatoes in half and lightly score flesh diagonally in two directions to create a diamond style pattern.
4. Place the potatoes into the parmesan mixture and toss to coat.
5. Working one by one, sprinkle the face of each potato with reserved parmesan cheese and place face down onto tray.
6. Spoon leftover mixture onto potatoes and bake for 40-50 minutes or until potatoes cooked through and golden brown.
